I am surprised to read...

"I adhered scrupulously to the precept of that brilliant
theoretical physicist L. Boltzmann, according to whom matters of
elegance ought to be left to the tailor and to the cobbler."

in "Relativity: The Special and the General Theory", by Albert Einstein.

But following his statement,
"Make things as simple as possible, but not simpler." (which surprisingly Einstein didn't mention in any of his writings!)
are we not seeing simplicity as elegance?
