Please stop the pointless dissing of Windows. It has its uses. I have
also attempted to give assistance but you have not even replied to
that.
If a PDF file was generated from text -- that is, it is not composed
of scanned images -- then it is simple to extract the text. Add a
generic/text-only printer, and set it to output to a file not a port.
Here is how:

Then print your PDF, give the output file name as whatever.txt, and
there you go. Plain text. Easy.
